1/2 cup chopped celery
 
1/4 cup sliced green onion
 
2 tablespoons butter or margarine
 
2 tablespoons all purpose flour
 
1/4 cup chicken broth
 
2 cups cooked short grain rice
 
1 1/2 cups diced cooked chicken
 
1/2 cup shredded process American cheese (2 ounces)
 
1 beaten egg
 
1/2 teaspoon poultry seasoning
 
1/2 cup cornflake crumbs
 
1 10 3/4 ounce can condensed cream of mushroom soup
 
1/3 cup milk
 
2 tablespoons sliced green onion

Directions

Advance preparation:
Cook celery and 1/4 cup onion in butter till tender.
Blend in flour; add broth.
Cook and stir till thick.
Stir in next 5 ingredients and 1/2 teaspoon salt.
Shape mixture into 12 balls; roll in crumbs.
Place in 13x9x2 inch baking pan.
Cover; refrigerate up to 24 hours.

Before serving:
Bake, uncovered, at 350° for 35 to 40 minutes.
Meanwhile, for sauce combine soup, milk, and 2 tablespoons onion; heat through.
Serve sauce over chicken balls.
Makes 4 servings.
