1 ¼ lb. chicken tenders, boneless
 
1 red bell bell peppers, julliened
 
1 shallot, minced
 
1 yellow squash, jullienned
 
1 zucchini, jullienned
 
roasted garlic oil
 
seasoning of choice or mix together 1 garlic clove, 1 tsp lemon juice, parsley and some garlic powder (optional)

Directions for preparation:

• Heat 1 tbsp of roasted oil.
• Add the chicken tenders and sauté for 3-4 minutes. (Take more time if the pieces are large and thick)
• Add seasoning of choice and the zuchhini, shallots, yellow squash and the red peppers.
• Sauté the vegetables for about 5 minutes, till they are crisp-tender.
• Serve hot!
