Chicken And Pineapple Recipe
Over the years I have mastered the art of making Chicken And Pineapple which I was taught by my family elders. I never fail to eat Side Dish while dining out and this is the most common dish that I order. The Chicken And Pineapple is one of the most popular creations of the Asian Cuisine. In my view, if one calls oneself a good cook, one must have a personal recipe of Chicken And Pineapple, just like I do.
Ingredients
2 fryers (2 1/2 pounds)
3/4 teaspoon dried ground chili peppers
1 1/2 teaspoons salt
3 minced garlic cloves
1/2 cup minced shallots or onions
1/2 teaspoon shrimp or anchovy paste
3 tablespoons oil
1 1/2 cups diced fresh or canned pineapple
2 tablespoons lime or lemon juice
2 teaspoons grated lime or lemon rind
2 cups coconut cream
2 teaspoons soy sauce
1 cup sauteed sliced shallots or scallions
Directions
Cut the chicken from the bones and into cubes.
Pound or chop to a paste the chili peppers, salt, garlic, shallots, and shrimp paste.
Toss with the chicken and let stand 1 hour.
Heat the oil in a saucepan; saute the chicken and pineapple until lightly browned.
Add the lime juice, rind, coconut cream, and soy sauce.
Cook over low heat 30 minutes or until tender.
Sprinkle the sauteed shallots on top.
Pound or chop to a paste the chili peppers, salt, garlic, shallots, and shrimp paste.
Toss with the chicken and let stand 1 hour.
