Coconut Gravy Chicken And Dumplings Recipe
This Chicken And Dumplings is from my Mom's cookbook; an easy to prepare treat for a family get together! An irresitible combination of chicken and tortillas - this Chicken And Dumplings is something you must not want to miss out on!
Ingredients
4 chicken breasts or 1 (3 pound) chicken
Salt and pepper
1 envelope country gravy mix
1 (20-ounce) package flour tortillas
Directions
Place the chicken in a large kettle.
Add enough water to cover and 1/2 teaspoon salt.
Simmer, covered, for 40 minutes or until chicken is tender.
Remove from broth; cool.
Remove and discard skin and bones.
Chop the chicken and measure to make about 3 cups, packed.
Measure 6 cups of broth and return to the kettle.
Return the chicken to the kettle and bring the broth to a boil.
Add salt and pepper to taste.
Combine the gravy mix with 1/2 cup cold water and stir into the boiling chicken broth.
Cut 3 or 4 tortillas at a time into 1/2 inch wide strips.
Cut across the strips once and add to the chicken mixture.
Repeat until all tortillas are used.
