Ingredients

 
1 Tbs olive oil
 
2 cups chopped onion
 
1 cup chopped carrot
 
1 1lb chicken breast, cut into bite size chunks
 
2 cups sliced mushrooms
 
1 cup frozen peas
 
4 cups chicken broth
 
salt and pepper
 
dumplings:
 
1 cup flour
 
1.5 tsp baking powder
 
1/2 tsp baking soda
 
salt
 
2 Tbs ground pepper
 
2 tbs chopped fresh parsley, or thyme, or chives
 
1/2 cup buttermilk
 
1 Tbs olive oil

Directions

Heat 1 tbs olive oil in a cast iron pot, saute onion and carrots and garlic about 5 mins. Add chicken and cook about 5 mins, stirring
until begining to brown. Add mushrooms, peas, salt and pepper and 4 cups chicken broth. bring to a boil. lower heat and simmer
about 10 mins. Meanwhile, sift together flour, baking powder, baking soda and 1/2 tsp salt and pepper.
Add buttermilk, oil and herb of your choice and stir. shape mixture into 8 small balls (about the size of a golf ball each).
Float dumplings atop simmering stew.Cover pot without lifting lid for 5 mins. Serve, sprinkled with fresh chopped parsley if desired.

one of our favs that I often make in the fall and winter, but where's the garlic and celery? It's best with chicken with bones for the flavour. Sometimes I mess with it and add curry and get in trouble with the kids.
