Chicken And Cucumber Salad With Minted Yogurt Dressing Recipe
Ingredients
| Plain yogurt | 1 Cup (16 tbs) | |
| Mint | 1/2 Cup (16 tbs), chopped | |

| Cooked and cubed chicken | 2 Cup (16 tbs) | |
| 1 medium cucumber, peeled, seeded, and thinly sliced | ||

| Pineapple | 1 Cup (16 tbs), canned | |
| Mint sprigs,for garnish | ||
Directions
1. In a medium bowl, combine yogurt, mint, salt, and pepper. Mix well. Add chicken and stir to blend. Cover and refrigerate 1 hour.
2. Add cucumber, red onion, and pineapple to chicken. Stir to combine. Garnish salad with mint sprigs.
