Ingredients
1/2 Kg. Chicken (or chicken
8 Cups water
1 Onion
1 Can creamed corn
2 Chicken stock cubes
1" Piece ginger
5 Shallots (springonions)
1 Tsp. oil
2 Tblsp, cornflour
4 Tblsp, water
2 Egg whites
2 Tblsp, extra water
4 Shallots (extra)
Salt and pepper to taste
Directions
Prepare chicken stock.
Combine the chicken stock, onion, creamed corn, crumbled stock cubes, extra ginger, chopped shallots, salt, pepper and oil in a large saucepan.
Mix cornflour to smooth paste with 4 Tblsp, of water.
Add to the soup.
Stir until the soup boils and thickens.
Reduce heat, simmer for a minute.
Beat egg whites and extra water lightly, and add to the soup in a thin stream, stirring well.
Remove meat from the chicken or chicken pieces, shred finely (you'll need about 1 cup shredded chicken).
Add the chicken meat to the soup and heat gently.
Top with extra chopped shallots.
