Chicken and Artichoke Salad Recipe
Ingredients
3 cups cubed cooked chicken
1 8 1/2-ounce can artichoke hearts, drained or 1 9-ounce package frozen artichoke hearts cooked, drained and cooled
12 toasted almonds
1/2 cup plain yogurt
1/2 cup mayonnaise
1 tablespoon lemon juice Salt and pepper to taste Lettuce leaves
12 black olives
Directions
Combine chicken, artichoke hearts and almonds in large bowl.
Blend yogurt and mayonnaise to-gether.
Add lemon juice, salt and pepper; blend well.
Taste and adjust seasoning.
Drizzle dress-ing over chicken mixture; toss gently.
Serve in bowl lined with lettuce leaves.
Garnish with black olives.
