Chicken and Artichoke Salad Recipe
Ingredients
| Cubed cooked chicken | 3 Cup (48 tbs) | |
| Canned artichoke hearts/1 9-ounce package frozen artichoke hearts cooked, drained and cooled | 8 1⁄2 Ounce (1 Package, Drained) | |
| Toasted almonds | 12 | |
| Plain yogurt | 1⁄2 Cup (8 tbs) | |
| Mayonnaise | 1⁄2 Cup (8 tbs) | |
| Black olives | 12 | |
| Lemon juice | 1 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Combine chicken, artichoke hearts and almonds in large bowl.
Blend yogurt and mayonnaise to-gether.
Add lemon juice, salt and pepper; blend well.
Taste and adjust seasoning.
Drizzle dress-ing over chicken mixture; toss gently.
Serve in bowl lined with lettuce leaves.
Garnish with black olives.
