Chicken Amandine Recipe

Chicken Amandine was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. The marriage of the irresistible flavors of Chicken with other ingredients is the secret to this Chicken Amandine. This is the most comforting Side Dish recipe I have come across. Ingredients

 
1 sm. onion, minced
 
6 tbsp. butter
 
1/2 tsp. curry powder
 
Dash of paprika
 
6 tbsp. flour
 
1 can cream of chicken soup
 
2 c. milk
 
1/2 lb. Cheddar cheese, grated
 
2 c. diced cooked chicken
 
1 c. blanched slivered almonds, toasted
 
1 c. cooked rice
 
1 8-oz. can sliced mushrooms
 
Buttered crumbs

Directions

Saute onion in butter; blend in curry powder, pa- prika and flour.
Blend soup and milk; stir into flour mixture.
Cook over low heat, stirring constantly, until smooth and thickened.
Add cheese, stirring until melted; fold in chicken, almonds, rice and mushrooms, mixing lightly.
Pour into greased oblong baking dish; top with crumbs.
Cover.
Bake at 325 degrees for 20 minutes.
Uncover; bake for 25 minutes longer.
