Chicken With White Button Mushrooms Recipe
Ingredients
1 small onion
2 oz. cultivated button mushrooms
3 tablespoons raw dark chicken meat
1 tablespoon peanut oil
1/2 teaspoon ginger sherry
1/4 pint (U.S. 5/8 cup) chicken stock
Pinch each salt, sugar and Ve-Tsin
1/2 teaspoon soy sauce
1 teaspoon cornflour
1 dessertspoon cold water
Directions
Roughly chop the onion and quarter the mushrooms.
After removing all tendons, cut the chicken meat into pieces the size of a largish butter bean.
Heat the oil in a frying-pan.
Cook the onion for 2 minutes at a high heat.
Add and fry the chicken pieces for 3-4 minutes.
Add the mushrooms and cook them for 1 minute.
Sprinkle in the sherry, stock, seasonings and soy sauce and cook for 1 minute.
Stir in the cornflour, blended with the water, bring to the boil and simmer for 1 1/2 minutes.
