Chicken With Water Chestnuts Recipe

| Water chestnuts | 10 , canned | |
| Ginger | 1 Teaspoon, grated | |
| Green chillies | 2 , chopped | |
| Sherry | 3 Tablespoon | |
| 1 tbsp. soya sauce | ||
| 1 tbsp. mishri or crystalized sugar | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Vegetable oil | 1/5 Cup (16 tbs) | |
| Sesame oil | 1 Teaspoon | |
| Cornflour | 1 Tablespoon | |
Directions
Boil the water chestnuts and peel off the shell and inner brown membrane, if you are using fresh water chestnuts.
Place the chicken cubes in a bowl and rub well with salt, cornflour and pepper.
Heat oil in a saucepan.
Add spring onions (leave 2 tablespoons for garnishing), ginger and saute for 2-3 minutes, add chicken cubes.
Stir fry until chicken cubes are partly cooked.
Add sherry, soya sauce and broth, simmer for 25 minutes.
Add chestouts and mishri and cook for another 20 minutes.
Serve hot garnished with spring onions and green chillies.
Sprinkle sesame oil on top.
