Ingredients

 Raw Chicken Breasts- 2nos, debone and cut into 1 inch cubes
 Salt1 Teaspoon
 Sugar1 Teaspoon
 Sherry3 Tablespoon
 Soy sauce1 Tablespoon
 Cornstarch3 Tablespoon
 Egg1 , beaten
 Oil1/2 Cup (16 tbs)
 Walnuts1 Cup (16 tbs), blanched
 Ginger2 Teaspoon, minced
 Garlic2 Clove (5gm)
 Boiling water1/2 Cup (16 tbs)
 Ac'cent- 1 teaspoon
 Bamboo shoots1 Cup (16 tbs), sliced

Directions

GETTING READY
1) In a bowl, combine chicken with salt, sugar, sherry and soy sauce.
2) Toss well and let it stand for 30 minutes.

MAKING
3) Drain the chicken, reserving the marinade.
4) Dip chicken in the cornstarch and then in the egg.
5) In a wok, heat oil and brown the walnuts in it.
6) Remove the walnuts and pour off all but 2 tablespoon oil.

FINALIZING
7) In the same wok, brown the chicken, ginger and garlic.
8) Add the water, Ac-€™cent, bamboo shoots and the marinade.
9) Cover and simmer for 15 minutes.
10) Add the walnuts and cook for 1 minute.

SERVING
11) Serve hot on the bed of rice.
