Chicken with Tropical Fruit Recipe
Ingredients
| Papaya | 1 | |
| Starfruit | 1 | |
| Banana | 1 | |
| Lime juice | 1 Tablespoon | |
| Chicken breasts-1 pound, boneless, skinless | ||
| Olive oil | 1 Tablespoon | |
| Chicken stock | 1/4 Cup (16 tbs) | |
| Nonfat yogurt | 1 Cup (16 tbs) (Curry powder-2 teaspoons) | |
Directions
GETTING READY
1. In a large bowl, place the papayas, starfruit, bananas, and lime juice and mix well
2. Prepare the chicken breasts by placing them inbetween two sheets of waxed pieces of paper. Pound them with a meat mallet till they are 1/3 to 1/2 inch in thickness
MAKING
3. In large, heavy cast-iron frying pan, add half the oil and half of the chicken and sauté on high for three minutes till done. The chicken will take five minutes on both sides
4. Complete cooking the chicken till done in batches
5. Transfer the chicken to the bowl with the fruit and toss well to combine.
6. In the same saucepan, place the stock and heat well till boiling
7. Add the curry powder and stir well to make a paste
8. Transfer this to a small bowl and add in the yoghurt to make a thick paste
SERVING
9. Serve the chicken and fruit on a platter with the sauce.
