Chicken With Tomatoes Recipe
Ingredients
| Whole raw chicken breasts - 2 | ||
| Dry sherry | 1 Tablespoon | |
| Soy sauce | 2 Tablespoon | |
| Cornstarch | 3 Tablespoon | |
| Onions | 1 Cup (16 tbs), chopped (Special oil - 1/4 cup) | |
| Salt | 1/2 Teaspoon (Special oil - 1/4 cup) | |
| Sugar | 1 Teaspoon (Special oil - 1/4 cup) | |
| Chicken broth | 1/2 Cup (16 tbs) (Special oil - 1/4 cup) | |
| Tomatoes | 2 (Special oil - 1/4 cup) | |
Directions
GETTING READY
1 Remove skin and bones from the chicken.
2 Cut each breast into fourths.
3 Prepare a mixture of sherry and 1 tablespoon of soy sauce and rub the chicken with it.
4 Sprinkle with 2 tablespoons of the cornstarch; let stand 15 minutes.
MAKING
5 In a skillet, heat the oil and saute the chicken until browned on both the sides for about 10 minutes.
6 Mix in the onions and saute the onions for 5 minutes.
7 In a bowl, combine the remaining cornstarch with the remaining soy sauce, the salt, sugar and broth; stir into the skillet until thickened.
8 Add the tomatoes and cook, covered for 3 minutes. Don not overcook.

9 Serve hot.
