Chicken With Potatoes & Peppers Recipe
Chicken with potatoes and pepper is a vegetable chicken recipe. Oven cooked with chicken flavored with Italian dressing, it is baked with added canned tomatoes and twin herbs. Fresh and flavorful, the chicken with potatoes and pepper can be served for both parties and homely dinners.
Ingredients
1/4 cup Italian Dressing
1 (2 1/2- to 3-pound) chicken, cut into serving pieces
1 can (28 ounces) whole peeled tomatoes, undrained and chopped
1 pound all-purpose potatoes,cut into chunks
2 medium onions, cut into quarters
2 medium red, green or yellow peppers, cut into thin strips
1 tablespoon fresh rosemary leaves
1 teaspoon thyme leaves
1 teaspoon salt
1/4 teaspoon pepper
Directions
Preheat oven to 375°.
In large skillet, heat Italian dressing and brown chicken over medium-high heat; set aside.
In 13 x 9-inch baking pan, combine remaining ingredients; add chicken and turn to coat.
Bake uncovered, stirring occasionally, 50 minutes or until chicken is done and vegetables are tender
