Chicken With Pineapple Recipe
Ingredients
| 2 tablespoons raw chicken breast | ||
| Pineapple | 3 Ounce, canned | |
| 2 dessertspoons peanut oil | ||
| 1 small onion, roughly chopped | ||
| 1/2 teaspoon ginger sherry | ||
| Pinch each salt, sugar and Ve-Tsin | ||
| Soy sauce | 1/2 Teaspoon | |
| Chicken stock | 4 Tablespoon | |
| Cornflour | 1/2 Teaspoon | |
| Water | 1 Tablespoon | |
Directions
Cut chicken into thin slices.
Drain pineapple.
If in rings, cut into small wedges.
If fresh cut a slice and remove peel; core and cut into small wedges.
Heat half the oil in a frying-pan and fry pineapple and onion for 3 minutes.
Remove and set aside.
Wipe out pan.
Heat remaining oil in it.
Add chicken pieces; toss and turn them for 3 minutes.
Add sherry, seasonings, soy sauce and stock and bring to the boil.
Return pineapple and onion to pan.
Add cornflour, blended with water, and heat through for 1 1/2 minutes.
