Chicken With Peppers Recipe

1 (1 1/2 lb.) fryer or broiler, boned and cut in 1/2 inch cubes
 
2 egg whites, slightly beaten
 
1 1/2 tablespoons cornstarch
 
2 tablespoons oil
 
1 tablespoon sherry
 
2 tablespoons soy sauce or 1 teaspoon salt
 
1 teaspoon sugar
 
1/2 teaspoon Tabasco
 
1/2 cup green peppers, seeded and diced
 
1/2 cup red peppers, seeded and diced

Directions

Dip chicken in egg whites to which cornstarch has been added.
Heat oil thoroughly and stir in chicken.
Saute for 2-3 minutes.
Add sherry.
When skillet is very hot again, add soy sauce, sugar and Tabasco.
Stir constantly for about 5 minutes, or until the chicken is almost done and juices are bubbling.
Add peppers and cook for about 4 more minutes.
