Chicken With Parsley Sauce Recipe

Ingredients
5 pounds roasting chicken
1 carrot, sliced
1 onion, quartered
2 stalks celery, chopped
2 tablespoons parsley
1 bay leaf
1/4 teaspoon thyme
6 peppercorns
1/2 teaspoon salt
1/4 pound bacon Sauce:
1 large bunch parsley
2 cups milk
1 bay leaf
1/4 teaspoon mace
6 peppercorns
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
1. In a large saucepan place bird, vegetables, herbs, and seasonings. Pour in enough cold water to cover thighs.
2. Cover pan and bring to a boil slowly. Simmer 1 1/4 hours or until tender. Turn bird over from time to time. Cool in pan.
3. Remove parsley sprigs from stalks. Boil sprigs. Reserve parsley stalks for 7 minutes in salted water. Drain, squeeze dry, and rub through a strainer to make 1 tablespoon parsley puree.
4. Heat milk, bay leaf, mace, peppercorns, and parsley stalks almost to boiling for 7 minutes. Strain.
5. Melt butter and stir in flour. Pour on milk and bring to a boil, stirring until sauce thickens. Simmer 2 minutes. Add parsley puree and season. Keep warm.
6. Cook bacon till crisp, drain on paper towels.
7. Drain chicken and carve, discarding skin.
