Ingredients
2 tbsp (30 ml) butter
1/2 lb (225 g) mushrooms, sliced
Salt and pepper
2 tbsp (30 ml) chopped parsley
2 tbsp (30 ml) oil
8 pieces of chicken
2 tbsp (30 ml) onion, chopped
2 tbsp (30 ml) tomato paste
1 Cup (250 ml) commercial chicken stock
1/2 Cup (125 ml) pitted olives
Directions
– In a large skillet, melt butter.
– Saute mushrooms until cooking juices have completely evaporated. Season with salt and pepper, sprinkle with parsley and set aside.
– In a casserole, heat oil, cook chicken pieces until golden, and season with salt and pepper.
– Add onion and tomato paste and cook 2 minutes longer, stirring constantly.
– Add chicken stock and olives and let mixture simmer for 1 hour, over low heat.
– Arrange chicken around the mushrooms on the serving dish, and spoon over the cooking juice.
