Chicken With Lime Recipe
Ingredients
1 broiler-fryer chicken, cut in parts
1 tsp. salt
1/4 tsp. black pepper
1/4 cup corn oil
1 Tbs. minced onion
1 clove garlic, minced
1/2 tsp. ground cumin
1/2 tsp. ground coriander seed
1/4 tsp. crushed red pepper
1/4 tsp. turmeric
2 Tbs. soy sauce
2 limes, quartered
Directions
Sprinkle chicken with salt and black pepper.
Heat corn oil in large fry pan over medium heat.
Add chicken and brown on all sides.
Push chicken to side of pan.
Add onion and garlic; saute until golden.
Add cumin, coriander, red pepper and turmeric.
Stir around to distribute.
Add soy sauce.
Reduce heat and cook slowly, covered, stirring frequently about 20 minutes or until fork can be inserted in chicken with ease.
