Chicken with Lentils Recipe
Ingredients
| Continental Lentils - 12 ounce, washed, picked | ||
| Onion | 1 | |
| Carrot | 1 | |
| Bouquet Garni | ||
| Salt | 1 To taste | |
| Ground black pepper | 1 | |
| Boned Chicken - 1 pound | ||
| Oil | 1 Tablespoon | |
| Butter | 3 Ounce | |
| Parsley | 1 Tablespoon, chopped | |
Directions
MAKING
1) In a saucepan, add the lentils and enough cold water to cover.
2) Peel the carrot and cut in half. Add into the saucepan along with the bouquet garni, salt and pepper.
3) Let the mixture come to a boil. Cover and cook on simmer for about 35 minutes.
4) Slice the chicken into little pieces.
5) In a saucepan, heat oil along with 1 1/2 ounces of butter. Add in the chicken pieces. Fry for about 5 minutes then turn over.
6) Transfer the chicken into the pan of lentil mixture. Cover and let simmer for 30 more minutes.
7) Fish out the bouquet garni and the carrot halves. Add in the rest of the butter.
SERVING
8) Serve Chicken with Lentils hot along with steaming rice on the side.
