Soak dried chestnuts overnight and then simmer in boiling water for 20 minutes.
For fresh chestnuts, remove the skins by making an incision in the top of the shell and putting into boiling water for 5 minutes.
Then simmer in fresh boiling water for 10 minutes.
Chop the chicken into bite-sized pieces and marinate for 30 minutes.
Deep-fry the chicken for 1 minute, reserving the marinade.
Drain the chicken well.
Deep-fry the chestnuts for 1 minute and drain.
Add the reserved marinade to the seasoning sauce.
Heat 1 tablespoon of oil in a saucepan and fry the onion and ginger for 15 seconds.
Add the chicken, chestnuts and seasoning sauce and simmer for 20 minutes.
Before serving, sprinkle with sesame oil.
