Ingredients
1 3-pound broiler-fryer, cut up
Salt
Salad oil
2 red cooking apples, cut into wedges
1 large head green cabbage, coarsely sliced
1 medium-sized onion, sliced
1 medium-sized green pepper, cut into strips
2 tablespoons brown sugar
1 tablespoon cider vinegar
1/4 teaspoon caraway seeds
Directions
1. Rub chicken pieces with 1/2 teaspoon salt. In 8-quart Dutch oven over medium-high heat, in 2 tablespoons hot salad oil, cook chicken until browned, removing pieces to plate as they brown.
2. In drippings in Dutch oven, over medium heat, cook apple wedges until golden on both sides, about 5 minutes. Remove apples to plate.
3. In drippings remaining in Dutch oven, over medium heat, cook cabbage, onion, and green pepper until tender, stirring occasionally and adding more salad oil if necessary. Stir in brown sugar, cider vinegar, caraway seeds, 1 teaspoon salt, and apples. Return chicken to Dutch oven. Reduce heat to low; cover and simmer 30 to 35 minutes, until chicken is fork-tender. Skim fat from liquid in Dutch oven.
