Chicken Walnut Escalopes Recipe

1/2 Cup (125 ml) corn flakes
2 tsp (10 ml) parsley
3/4 tsp (3 ml) lemon-flavored pepper
2 tbsp (30 ml) finely chopped walnuts
4 chicken escalopes
1/4 lb (115 g) each
2 egg yolks, beaten
Directions
– In a bowl, combine all breading ingredients and toss gently.
– Dip chicken escalopes in egg yolks and dredge with breading.
– In a microwave-safe dish, arrange the escalopes and cook at MEDIUM for 2 minutes.
– Turn escalopes over, then cook another 2 minutes.
– Let stand 5 minutes before serving.
