Chicken Veloute Recipe

Ingredients

 
2 carrots, diced
 
1, onion, chopped
 
4 cups (1 L) chicken stock
 
3 tbsp (45 ml) butter
 
3 tbsp (45 ml) flour
 
8 02: - (226 g) chicken (or leftover cooked chicken)
 
1/4 cup (60 ml) fast-cooking rice
 
Salt and pepper
 
Pinch of chopped chives
 
Pinch of basil
 
3/4 cup (180 ml) 35% cream

Directions

–  In a microwave-safe dish, place vegetables and 1 cup (250 ml) chicken stock. Cook at HIGH for 6 minutes. Set aside.
–  In a large pyrex cup, cook butter and flour at HIGH for 1 minute. Pour rest of chicken stock into mixture and stir gently.
–  Add chicken, rice and cooked vegetables. Season with salt, pepper, chives and basil, and stir well. Cook at HIGH for 10 minutes and stir. Cook at LOW for 10 minutes.
–  Add cream and stir gently. Serve with croutons.
