Chicken Tropicana Recipe

Ingredients
1 4 lb (1.80 kg) chicken, cut up
1 egg, beaten
1/2 Cup (125 ml) flour
1/3 Cup (80 ml) olive oil
19 oz (540 ml) canned pineapple, sliced
Water
1/3 Cup (80 ml) honey
2 tbsp (30 ml) cornstarch
Pineapple syrup
3/4 Cup (180 ml) wine vinegar
1 tbsp (15 ml) soy sauce
1/4 tsp (1 ml) ground ginger
1 cube concentrated chicken stock
1/4 tsp (1 ml) garlic powder
1 green bell pepper, cut into thin strips
1 fresh pineapple (optional)
Directions
– Preheat oven to 375 °F (190 °C),
– Wash chicken, pat dry and carve into pieces.
– In a bowl, combine beaten egg and flour, and dip chicken pieces into batter.
– In a large skillet, heat oil and cook chicken pieces until golden.
– Place chicken pieces in shallow roasting pan and set aside.
– Drain pineapple, pour syrup into measuring cup and add enough water for 1 1/4 cups (300 ml) of liquid.
– In a saucepan, combine honey, cornstarch, pineapple juice, vinegar, soy sauce, ginger, garlic, and concentrated chicken stock and bring to boil, stirring constantly. Let mixture boil for 2 minutes then pour sauce over chicken.
– Cook in oven, uncovered, for 30 minutes. Add pineapple slices and green bell pepper strips to mixture. Cook 30 minutes longer or until chicken is tender.
