Chicken Tournedos Recipe
Ingredients
| Butter | 2 Teaspoon | |
| 4 chicken breast tournedos or chicken leg tournedos of 1/4 lb (150 g) each | ||
| Shallots | 2 Tablespoon, chopped | |
| Tomato Paste | 1 Tablespoon | |
| Paprika | 1 Tablespoon | |
| Tarragon | 1 Teaspoon | |
| Beer | 1 Cup (16 tbs) | |
| Brown sauce | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a large pan, melt the butter and cook the chicken tournedos for 4 to 5 minutes on each side; season.
Remove the tournedos from the pan and keep warm.
Add the shallots to the pan and lightly saute.
Incorporate the tomato paste, paprika, tarragon, and beer; let reduceby half.
Add the brown sauce and let simmer over low heat until the sauce has thickened.
Pour the paprika sauce over the chicken.
