6 oz (180 g) boneless, skinless chicken breast, cut into
1/4-inch strips
1/2 cup (120 ml) onion, sliced

1/2 cup (120 ml) Passilla chiles or green peppers, sliced
1 cup (240 ml) Roma tomatoes, diced
2 cloves fresh garlic, chopped
1/4 tsp (1 ml) cumin
1 jalapeno or serrano chile, chopped and seeded, optional, if spicy is desired
12 corn tortilla chips
2 tbs (30 ml) Fresh Cilantro, chopped plus
4 sprigs, for garnish
2 tbs (30 ml)Fresh Oregano, chopped
Directions
In a medium saucepan, bring chicken broth to a boil; add chicken strips and cook for 5 minutes, skimming the top.
Add the vegetables and cook for 10 more minutes.
