2 pounds chicken pieces or bones (or 2 chicken carcasses)
6 cups water (or water to cover, if using carcasses)
1 large onion, quartered
1 large carrot, thickly sliced
2 stalks celery, halved
1 bay leaf
2 sprigs fresh parsley
1 teaspoon cider vinegar or herbed vinegar
1 clove garlic, halved (optional)
Directions
Place all of the ingredients in a large stockpot.
Bring to a boil and skim off any foam that rises to the surface.
Reduce heat, cover, and simmer gently for 1 1/2 to 2 hours.
Strain and refrigerate overnight.
Remove fat from surface, refrigerate or freeze.
