Red Kidney Bean And Corn Chicken Stew Recipe
Ingredients
500g chicken breast fillets, skinned and halved
1/2 onion, sliced
3 sticks celery, sliced
Freshly ground black pepper
375ml water
Salt
400g chopped tomatoes
200g cooked red kidney beans
200g cooked sweet corn
Directions
Combine chicken, onion, celery and water in a saucepan.
Add salt and pepper.
Bring to the boil, then cover and simmer for 1 hour.
Remove from heat, cool and skim fat.
Remove chicken, strain liquid.
Wipe out pan.
Cut chicken into chunks, discarding any bones.
Combine with strained liquid in pan.
Add tomatoes, beans and corn, heat through.
Add salt and pepper.
