Chicken Steamed In Spiced Broth Recipe
Ingredients
| 1 whole broiler-fryer | ||
| Salt | 1/4 Teaspoon | |
| 1 lemon, rind pricked all over with a fork | ||
| Garlic | 2 Clove (5gm), crushed | |
| 3 cups Chicken Stock or low-sodium chicken broth | ||
| Cinnamon stick | 1 | |
| 1/2 teaspoon each ground cumin and coriander | ||
| Ground ginger | 1/8 Teaspoon | |
Directions
1 Rub the chicken cavity with the salt.
Place the lemon I and garlic inside the cavity and truss the chicken
2 In a Dutch oven large enough to hold a rack or colan der, bringthe stock, cinnamon stick, cumin, coriander, cardamom, ginger, and red peppertoa boil.
Place a rack in the Dutch oven, set the chicken on top, cover, and simmer over low heat for 1 hour.
Transferthe chicken to a cutting board, remove and discard the skin, and cut into serving pieces.
