Chicken Soup Recipe
This Chicken Soup is one among the many delicious other soups I have tried my hand at and iturns ou to be a hit everytime I make it. The Chicken Soup given below is indeed a soup with a difference. Find out why!
Ingredients
3-4 chicken quarters
1/2 onion, chopped
1 clove garlic, minced
2-3 carrots, sliced
1 cup (240 ml) celery, sliced
1 potato, cubed
1 tbs (15 ml) parsley
1 1/2 tsp (8 ml)Jerusalem Artichoke Flour salt, to taste pepper, to taste
Directions
Place chicken in soup pot and add enough water to cover.
Add onion and garlic; cook, partially covered, over medium-high heat for about 45 minutes.
Add carrots, celery, potato and parsley and cook another 30 minutes.
Remove chicken from pot; separate chicken from bones, discarding skin, cartilage, etc.
Skim fat from surface.
Return chicken to pot.
Five minutes before serving add flour, salt and pepper.
