Cream Of Chicken Soup Recipe

1/2 cup (125 mL) butter or margarine
1/2 cup (125 mL) flour
1 cup (250 mL) milk
6 cups (1.5 L) chicken consomme
1/2 cup (125 mL) cream of your choice
1 to 2 cups (250 to 500 mL) cooked chicken, diced
Salt and pepper to taste
6 green onions, diced (optional)
Directions
€¢ Cream together the butter or margarine and the flour.
€¢ Place in a 12-cup (3 L) microwave-safe bowl the milk and the chicken consomme.
€¢ Microwave at HIGH 10 minutes.
€¢ Add the butter-flour mixture to the cream.
€¢ Mix with a whisk. Add to the hot liquid. Stir well.
€¢ Microwave 10 minutes at HIGH, stirring 3 times.
€¢ When creamy, add the chicken, salt and pepper to taste and the green onions.
€¢ Place in a 12-cup (3 L) microwave-safe bowl the milk and the chicken consomme.
