| Frozen peas | 1 6 Ounce, Defrosted | |
| Mandarin oranges | 2 11 Ounce, drained | |
| 1 pound cooked, cubed chicken breast fillets | ||
| Red onion | 1/4 Cup (16 tbs), finley chopped | |
| Water chestnuts | 1/4 Cup (16 tbs), thinly sliced | |
| 1/2 cup light, reduced-calorie mayonnaise | ||
| 1/2 cup low-fat vanilla yogurt | ||
| Grated ginger | 1 Teaspoon | |
| Lime rind | 1 Teaspoon, grated | |
| Salt | 1/4 Teaspoon | |
| Pepper white | 1 Dash | |
Directions
Blot snow peas and oranges dry on paper towels.
Set aside.
In a bowl, combine chicken, snow peas, oranges, onion and water chestnuts.
In a small bowl, combine remaining ingredients.
Pour over chicken and vegetables and mix gently with rubber spatula.
Cover and refrigerate several hours to allow flavors to blend.
