Salad:
 Egg plant1 Medium, slice

 Chopped tomatoes1⁄4 Cup (4 tbs)
 Lemon juice1 Tablespoon
 Lettuce1 Cup (16 tbs), torn into 1/2 inch pieces

Directions

GETTING READY:
1)On a cutting board or a flat surface place a sheet of cling wrap or plastic wrap and place the chicken breast pieces on it and place another sheet of wrap on the meat and hammer it with a rolling pin or a kitchen hammer. Set aside after the chicken has become thin.
2)Chop the carrots, tomatoes and thaw the frozen peas, set aside in a bowl.
3)In a food processor crumble bread slices with cheese, red chili flakes, coriander along with salt and pepper to taste. Grind until it becomes a fine powder which is the right consistency to coat the chicken with.

MAKING:
4)Place the bread crumbs on a plate, the egg wash in a bowl and make an assembly line on the counter so as to not let the egg wash mix in with the crumbs.
5)Dip the hammered meat meat in the egg wash and then place on the crumbs plate and coat it well. Be sure to finish coating with the eggs and then proceed because we do not want them mixing.
6)On a heated griddle or frying pan, pour olive oil and after the pan is hot place the crumbed chicken pieces on it and cook till golden brown on both sides.
7)Slice an eggplant and in the same pan or griddle pour some more olive oil and fry until cooked and be sure to season it with salt and pepper to taste.
8)In the bowl with the chopped carrots, peas and tomatoes squeeze some lemon juice and tear some lettuce into the bowl and toss well with salt and pepper, olive oil.

SERVING:
9)Serve the salad on the side with the grilled egg plant on top and enjoy the chicken schnitzel!

TIP:
On a sandwich roll or a burger bun splash some sauce of your choice along with some salad and a schnitzel piece and enjoy. This makes for a great grab and go meal!
