Chicken Saute Mediterranean Recipe

Ingredients

 
1 package (1 1/4 pounds) PERDUE® Fit 'n Easy fresh skinless and boneless chicken breasts
 
Salt and ground black pepper to taste (optional)
 
1 1/2 teaspoons dried herbs de Provence or Italian herb seasoning
 
2 teaspoons olive oil
 
1 to 2 cloves garlic, minced
 
1 1/2 tablespoons chopped sun dried tomatoes
 
1 can (8 ounces) whole tomatoes, undrained
 
1 can (16 ounces) great Northern or cannellini beans, drained and rinsed

Directions

Sprinkle breast halves lighdy with salt and generously with pepper; press herbs into chicken.
In large nonstick skillet over medium-high heat, heat oil.
Add chicken and brown 2 minutes on each side.
Add garlic and sun-dried tomatoes; cook and stir 1 minute.
Stir in canned tomatoes, including liquid, and beans.
Reduce heat to medium-low; cover partially and simmer 15 to 20 minutes until chicken is cooked through.

Excellent! I added more sun-dreid tomatoes than called for and a whole bunch of slied mushrooms when the garlic and sun-dried tomates are added. I served this as a main meal; the one on the no-carb diet had it as is and everyone else had it with galic bread. All were happy!
