6 4-oz pieces (720 g) chicken breast, pounded into cutlets
6 thin slices prosciutto, cut to match chicken cutlets
1 cup (240 ml) cooked spinach, well drained
3 cloves garlic, crushed
2 tbs (30 ml) Parmesan or Romano cheese, grated
3 tbs (45 ml) Blenda d'ltalia or Italia Piccante Vinegar
3 tbs (45 ml) olive oil
Directions
Lay out the chicken cutlets with the prosciutto on top.
Mix spinach, garlic, cheese and 1 tbs Blenda d'ltalia.
Place a dollop of the mixture on the center of each cutlet, fold, and skewer with toothpicks.
Heat the oil in a heavy skillet, brown the rolled cutlets in oil, turning until cooked through, 6-8 minutes per side.
Add remaining 2 tbs Blenda d'ltalia and raise the heat.
Deglaze pan by scraping the browned food and mixing it into the vinegar.
Use as sauce.
