Chicken Salad Pockets Recipe
Ingredients
| Cooked chicken breasts | 1 1/2 Cup (16 tbs), cubed | |
| Celery | 1/2 Cup (16 tbs), sliced | |
| Golden Raisins | 2 Tablespoon | |
| Green onions | 2 Tablespoon, chopped | |
| Reduced-calorie mayonnaise - 1/3 cup | ||
| Lemon juice | 1 Tablespoon | |
| Fresh spinach leaves or watercress - 1 cup | ||
| Red apple | 1 Medium, sliced (Curry powder or ginger - 1/4 teaspoon) | |
| Whole wheat pocket (pita) bread 2 (6-inches), halved crosswise | ||
Directions
MAKING
1) Take a medium size bowl and combine together celery, chicken, green onions and raisins.
2) In another small bowl mix together lemon juice, mayonnaise, and curry powder. Blend all the ingredients nicely.
3) Pour the prepared sauce over chicken mixture. Toss and mix well.
4) Place 1/4 spinach leaves and 1/4 apple slices in each pocket. Keep the pieces extending slightly over the edge of each pocket.
SERVING
5) Spoon out 1/4 chicken salad in each preparedpocket and serve immediately!
