Chicken Salad A La Soy Recipe
Ingredients
| Chicken | 1 3 pound | |
| Sesame oil | 3 Tablespoon | |
| Soy sauce | 3 Tablespoon | |
| Dash Tabasco sauce | ||
| Head of lettuce | 1 Small, shredded | |
| Toasted slivered almonds for garnish | ||
| Mandarin orange slices or pineapple cubes for garnish | ||
Directions
Place chicken, breast side up, in a shallow roasting pan.
Roast uncovered in a 375° preheated oven for 2 hours, or until drumstick easily moves up and down in socket.
Cool; discard skin and bones.
Shred chicken and refrigerate.
Combine oil, soy sauce and Tabasco; blend well and pour over chicken.
Line a platter or individual plates with shredded lettuce.
Mound chicken mixture on top.
Garnish with almonds and fruit.
Makes 8 servings.
