Ingredients

 1 chicken (about 1 kg)
 Iceberg lettuce head1 Small
 Tomatoes3 Large, sliced
 Cheddar Cheese2 Tablespoon, grated
 4 spring onions, chopped with some of the tender green
 Apple1 Large, diced
 Cucumber1 Medium, peeled
 Roasted sesame seeds1 Teaspoon
 Olive oil1 Tablespoon (Dressing)
 2 tbsp any non-synthetic vinegar
 Prepared mustard1 Teaspoon (Dressing)
 Garlic5 Clove (5gm), chopped (Dressing)
 Parsley1 Tablespoon, chopped (Dressing)
 Salt1 Teaspoon (Dressing)
 Ground black pepper1 Teaspoon (Dressing)

Directions

Wash chicken and remove all fat.
Place in an ovenproof dish and cover with cling wrap.
Make 1-2 slits in cling wrap.
Microwave on medium for 15 minutes.
Allow to rest in oven till cool.
Remove and discard skin and bones of chicken.
Cut flesh into neat strips.
Wash lettuce and shred.
Line a salad dish with lettuce and arrange tomatoes on top.
Sprinkle with cheese and pile on chicken, spring onions, apple and cucumber.
Sprinkle with sesame seeds.
Combine ingredients for dressing and beat well to mix.
Sprinkle a little dressing over salad and serve the rest separately.
