 Capers3 Tablespoon, washed, drained and coarsely chopped
 Freshly made mayonnaise/Good, unsweetened commercial variety1 Cup (16 tbs)
 Sour cream1 Cup (16 tbs)
 Finely chopped parsley1 Tablespoon

Directions

Combine the chicken, salt and a few grindings of black pepper in a large mixing bowl.
Stir in the onion or scallions, the celery and the capers.
Mix together the mayonnaise and sour cream, and carefully fold it into the chicken mixture.
Taste for seasoning.
