Chicken Roma Recipe
Chicken roma is a fresh and savory chicken reicpe prepared with wine. Skillet cooked with tomatoes and fresh ripe olives, the chicken roma is flavored with garlic and onion soup mix. Simmered to doneness, the chicken roma goes well when served with noodles.
Ingredients
2 tablespoons oil
2 1/2 to 3-pound chicken, cut into serving pieces
1 can (14 1/2 ounces) whole peeled tomatoes, undrained and chopped
1/2 cup sliced pitted ripe olives
1 clove garlic, finely chopped
1 envelope Onion, Onion-Mushroom, Beefy Mushroom or Beefy Onion Recipe Soup Mix
1/4 cup dry red wine
1 package (8 ounces) broad egg noodles
Directions
In large skillet, heat oil and brown chicken over medium-high heat; drain.
Add tomatoes, olives and garlic, then onion recipe soup mix blended with wine.
Simmer covered 40 minutes or until chicken is done.
Meanwhile, cook noodles according to package directions.
If necessary, skim fat from sauce.
