Chicken Risotto Recipe
Chicken Risotto is an amazingly delicious mouth watering side dish recipe. Serve it at your dinner party; I bet you will have a huge fan following for this one!
Ingredients
2 1/2 pounds frying chicken, cut up
1 (7 1/2 ounce) package Rice-a-Roni (any flavor)
1 can chicken broth plus water to equal 2 1/4 cups liquid
1 (3 ounce) jar pimiento stuffed olives, drained
Directions
In a skillet, brown chicken (about 10 minutes on each side).
Remove chicken from skillet leaving grease in pan.
Add rice, including seasoning packet, to skillet and stir until lightly browned.
Pour in chicken broth and water.
Bring mixture to a boil.
Place chicken on top of rice mixture.
Lower heat, cover and simmer 20 to 30 minutes.
Fluff rice with fork and top with olives.
