Chicken & Rice Gumbo Recipe
Ingredients
1 (46-fluid ounce) can Chicken Broth
1 pound boneless chicken, cut in bite-size pieces
1 (17-ounce) can whole kernel sweet corn, drained
1 (14 1/2-ounce) can stewed tomatoes, undrained and chopped
1 (10-ounce) package frozen okra, thawed and chopped
1/2 cup uncooked rice
1 teaspoon ground black pepper
Directions
In large saucepan, over medium-high heat, heat chicken broth, chicken, corn, tomatoes, okra, rice and pepper to a boil.
Reduce heat; simmer, uncovered, 20 minutes or until rice is cooked.
