Chicken & Rice Gumbo Recipe
Ingredients
1 (46 fluid ounce) can COLLEGE INNĀ® Chicken Broth
1 pound boneless chicken, cut into bite size pieces
1 (17 ounce) can whole kernel sweet corn, drained
1 (14 1/2 ounce) can stewed tomatoes, chopped
1 (10 ounce) package frozen okra, thawed and chopped
1/2 cup uncooked rice
1 teaspoon ground black pepper
Directions
In large saucepan, over medium-high heat, heat chicken broth, chicken, corn, tomatoes with juice, okra, rice and pepper until mixture comes to a boil.
Reduce heat; simmer, uncovered, 20 minutes or until chicken and rice are cooked.
