Chicken Quarters Forestiere Recipe
Chicken Quarters Forestiere is one of the tastiest ways I know of to cook chicken. Ingredients
1 tablespoon salad oil
1 tablespoon butter or margarine
2 2 1/2-pound broiler-fryers, cut into quarters
1/4 cup water
1 teaspoon salt
1/2 pound mushrooms, sliced
2 medium-sized shallots, chopped
3/4 cup sour cream or creme fraiche
1/4 cup milk
Directions
1. In 8-quart Dutch oven over medium-high heat, in hot salad oil and butter or margarine, cook chicken, a few pieces at a time, until browned; remove pieces to plate as they brown.
2. Return all chicken pieces to Dutch oven. Add water and salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 25 to 30 minutes, until chicken is fork-tender. Remove chicken to plate.
3. In liquid in Dutch oven, over medium heat, cook mushrooms and shallots until shallots are tender. Skim fat from liquid. Stir in sour cream and milk. Return chicken; cover and heat through (do not boil or mixture may curdle).

Delicious and easy to make! I served this with butternut squash couscous and sauteed green beans. Double yum!
