Chicken Pontalba Recipe

Ingredients
2 1/2-3 pound broiler chicken or 4 chicken breasts
3 ounces butter
2 yellow onions, thinly sliced
1 tablespoon garlic, finely chopped
1/2 pound sliced mushrooms
6 ounces smoked ham, finely chopped
2/3 cup dry white wine
3 tablespoons parsley, finely chopped
Water
Garnish:
1 red pepper, cut in strips
Coating:
1/3 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
For Frying:
2-4 tablespoons butter
Directions
1. Cut the chicken in breast and leg parts.
2. Combine flour, salt, and pepper.
3. Dredge chicken parts in flour mixture. Heat butter in skillet and brown parts. Add water and simmer for 40-50 minutes. Set aside.
4. Meanwhile melt the butter, add onion and garlic, and saute till transparent. Add mushrooms and ham and saute for another 5 minutes. Add the wine and bring to a boil. Keep mixture warm while chicken is cooking.
