1 cup sliced celery
 
1 small onion, chopped
 
2 tablespoons butter or margarine
 
1/2 teaspoon ground ginger
 
2 cans condensed cream of chicken soup
 
1 1/3 cups water
 
1 1/3 cups milk
 
1 can (5 ounces) boned chicken, diced
 
1 can (about 9 ounces) pineapple tidbits, drained
 
Shredded coconut

Directions

1. Saute celery and onion in butter or margarine until soft in a large heavy saucepan or Dutch oven; add ginger, blending thoroughly.
2. Stir in soup, water and milk. Add chicken and pineapple. Heat, stirring frequently, until bubbly-hot.
3. Ladle into soup bowls. Sprinkle with coconut
