Ingredients
| 2 boneless, skinless chicken breast halves (about 3 ounces each) | ||
| 1/2 cup uncooked rotini or other small pasta | ||
| Tomato | 1/2 Cup (16 tbs), chopped | |
| Cucumber | 1/2 Cup (16 tbs), chopped | |
| Green onion | 1 Medium, thinly sliced | |
| 1/4 cup mayonnaise or salad dressing | ||
| Salt | 1/4 Teaspoon | |
| 1/8 teaspoon dried dill weed | ||
Directions
Place chicken breast halves in 16-ounce casserole or on plate with thickest parts to outside edges.
Cover tightly and microwave on high (100%) until thickest parts are done, 3 to 4 minutes.
Uncover and refrigerate until cool enough to handle, about 10 minutes.
Cook rotini as directed on package; drain.
Rinse in cold water; drain.
Cut chicken into cubes.
Mix chicken, rotini and remaining ingredients in bowl.
Cover and refrigerate until chilled, about 3 hours.
