Do you have left over chicken in your refrigerator? Did you ever imagine having a great home cooked meal with your left overs? Well, you actually can and you can enjoy a healthy and filling dish even without the need to cook for a long time. With your leftover rotisserie or fried chicken, you can remove the meat from the bones and make your chicken pasta salad. You can also boil half a pound of chicken to use for this recipe. Do not forget to save the broth which you can also use for stews and soups.

Ingredients

 Shredded chicken2 Cup (16 tbs)
 Virgin olive oil1 Tablespoon
 Chicken broth1/4 Cup (16 tbs)
 Cayenne pepper1/4 Teaspoon
 Cheese1/4 Cup (16 tbs), grated
 Ground pepper1/4 Teaspoon
 Salt2 Teaspoon
 1 cup uncooked macaroni, twist, or wheel pasta
 Butter1 Tablespoon
 Mayonnaise1/4 Cup (16 tbs)

Directions

1 On a pan, heat olive oil and add in the chicken. Pour in the broth and allow this to simmer. The chicken broth will help keep the moisture of the chicken keeping its meat tender and flavorful. For those who are on a diet, you can use the breast part of the chicken for a lower fat content. Add in the cayenne pepper, ground pepper, and half teaspoon of salt, then remove from heat.

2 In a separate pot, boil 2 ½ cup of water with the remaining salt. When boiling, cook the pasta for 7 minutes, then drain the water. While still under the heat, melt the butter and mix with the pasta. Add the sauteed chicken and cheese.

3 Remove from heat and allow to cool for a few minutes. Add in the mayonnaise and mix well.

You have two options in serving your chicken pasta salad. You can either serve it hot with grated cheese sprinkled on top or serve this as a cold salad. When serving this recipe cold, you can place it in a air tight container and chill for at least two hours.

If you are planning for a weight loss diet, you can remove the mayonnaise in this recipe and replace with vinaigrette or French dressing. Simply sprinkle two tablespoons of dressing and toss the salad.
